"I enjoyed every part of what was taught in the courses I signed up for, and I was surprised by a lot in a good way. The information that prompted me to learn more about myself was the decolonize your diet teachings. The reason for this is because food is something we eat and need every day but that does not mean it is good for you, especially if you know it is heavily processed. "The information that was transformative in terms of critical thinking were the free resources especially the videos dealing with racism because they were able to lay out so much information that had you thinking. Reviewing the different types of racism and how it is in America, it makes you think and realize how close to home it really is. This is because some people see it on tv or learn about racism in history books but fail to realize how alive it is in today’s society and don’t understand that it happens, and many negative consequences result because of it. "These courses have taught me a lot about my culture and myself as a Latina woman. And in a way reassured a lot for me. Growing up, I was always seen as “not Mexican” enough for other Mexicans. I think that affected me in ways that I had never thought about till taking courses with Dr. Yañez. I gained more confidence with her teachings, and I got to a point where I realized I did not need to make others happy. I was proud of who I was and my culture and no one could take that from me. Another thing I took away from these courses was the meaning of food. I have always loved and appreciated that of my people. But I never realized how much it meant to me. Food for my family and I’m sure plenty of others is communal. We eat, gather and love each other all in one setting.
